Here in Lancaster County PA things haven’t changed much.  The methods you show are still use by the Amish community as a way of following the teachings of their religion.  Here is a video of them.  Note the absence of cars.  Amish use horse and buggy for local transportation.

Just ran a reaper-binder last year.  They are not stacking the bundles like we do.  We stack them 5 or 7 standing up and 3 as a cover.  The idea is to have the bundles dry before stacking them on a hey wagon for the thrasher, 2+ days of drying.  That is where we normally come in we run a 1914 Case 65 steam engine.
