There are charts and tables that list what colors were available for each body style of each year, often with an obsolete industry matching code. But there is no cross reference of what the paint code on the "build card" itself means. They did follow patterns for later years, for example paint numbers in the 200’s generally are blue and those in the 500’s are generally grey. Assuming they followed the same general numbering pattern for earlier years you can make some guesses. For example if your year and body style only had one color blue listed in the various old paint books and your build card says the car shipped with a paint code of 2xx (where xx are some digits) then there is a good chance that your car was that color blue. However if there were multiple colors of blue for that body style then you have no way of knowing which blue your car was, just that it was likely to be one of those blues.

 

Even less is known about trim/upholstery as there was no after market suppliers for replacement kits publishing charts, etc. But again, later years seem to follow a pattern for types of materials. From a few data points, I think 200s were likely mohair, 300s may have been broadcloth, etc. If the early cars followed the same numbering patterns then you might be able to guess from your build card what type of interior was in the car. Fortunately for many, remnants of the original upholstery are often left behind when a car was reupholstered so you might have a clue from that even if the mapping of the code numbers used by the factory have been lost.
