Fred Rawling
I find a lot of stuff at Ace Hardware. There is an Ace industrial Hardware in Torrance, Ca. that has a huge selection of bolts and screws. The other places are McMcaster Carr and McFadden Dale on line. The head, whether bolt or screw, is thicker, top to bottom, than "regular". Ben

Frank DuVal
There are also Cheese Head screws! These have a flatter head than Fillister, usually. Some pictures look the same. https://www.mcmaster.com/products/cheese-head-screws/?s=screws

When you said 'bolt' I wasn't sure whether you meant a hex-head or just a slotted head screw. I know the original hex-head bolts on my '38 Buick have a thicker head than modern bolts. I haven't seen any new replacements that have a similar thick hex head. Fillister head screws should be available from several sources.
