If you go to the Cadillac & LaSalle Club website forum and do a search on 'overheat flathead' you will find many cnoversations. These engines are notoroius for sediment building up in the block. If you get a factory serviceman bulletin reprint (often available on Ebay) it will describe how to flush these engines. A standard flush doesn't do much. Basically you have to take a metal tube with compressed air and pull out one head bolt at a time, insert it, and blow out the sediment using compressed air.
Other things to check are the radiator itself, and if the thermostat is out, it may be flowing too fast. Good luck, they are great cars!
